Italian bread salad

Ingredients for 4 servings:

  • 4 slices of bread
  • 2 yellow bell peppers
  • 4 tomatoes
  • 2 bunch spring onions
  • 1 oak leaf lettuce
  • 4 tbsp vinegar (apple cider vinegar)
  • 200 ml vegetable broth (instant)
  • Salt
  • pepper
  • 3 tsp oil (nut oil)
  • 1 tsp hazelnuts, sliced

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Tear the bread slices into large pieces and toast them in a nonstick pan without any fat. Slice the bell peppers, wedge the tomatoes, and slice the spring onions. Tear the lettuce into bite-sized pieces and toss everything together. Mix the vinegar with the broth, salt, and pepper. Whisk in the nut oil and season to taste. Arrange the salad on plates, drizzle with the dressing, and sprinkle with hazelnuts.
