Calamari stuffed with salsicca

Ingredients for 2 servings:

  • 2 large squid tubes
  • 4 sausages
  • 1 tsp fish sauce
  • 1 handful of fresh leaf spinach
  • some thyme, fresh
  • 1 m.-large onion(s), red
  • 1 tbsp, heaped herbs, Italian
  • 500 ml tomato(s), pureed

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Preheat the oven to 200 degrees Celsius. Cut two slices from the center of the onion and finely chop the rest. Squeeze the sausage out of its skin. Finely chop the spinach and a few thyme leaves. Mix both with the sausage and fish sauce. Fill each tube with an onion ring and the sausage. Seal with a toothpick. Mix the passata with the chopped onions and herbs. Place the tubes in a baking dish and pour the tomato sauce over them. Arrange the remaining thyme sprigs on top. Cover and bake in the oven for about 40 minutes.
