Mushrooms in tomato sauce

Ingredients for 4 servings:

  • 500 g mushrooms, fresh or from a jar
  • 2 large onions
  • 2 cloves garlic
  • 6 tbsp olive oil
  • 1 can of pizza tomatoes
  • some salt and pepper
  • ½ bunch parsley

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Clean and drain the mushrooms. Peel the onions and slice them into half rings. Peel the garlic and slice them into small pieces. Heat the oil in a shallow pan or frying pan and sauté the mushrooms. Add the onions and garlic and let them become translucent. Add the tomatoes and their juice, season with salt and pepper, and simmer for about 15 minutes. Wash and roughly chop the parsley, add it, and simmer for a few more minutes. Season again with salt and pepper. If the sauce is still too thin, reduce the liquid over a higher heat. This dish is very versatile. It is perfect warm as a starter with fresh bread, as a main course with rice, or as a side dish to stir-fries. It can also be served cold as a complement to any buffet.
