Ingredients for 4 servings:
- 500g spaghetti
- 400 ml chopped tomatoes
- 250 g tomatoes, overripe
- 4 cloves garlic
- 1 bunch of basil
- 1 pack of Italian herbs, frozen
- 2 tbsp olive oil, cold squeezed
- Salt
- pepper
- Sugar
- 500 ml tomato(s), pureed
- some Parmesan
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
quick, easy pasta with tomatoes and herbs
Cook the spaghetti al dente. Strain, reserving the cooking water. Cut the tomatoes into pieces or tear them into pieces with a fork and place them in a pot, along with the chopped tomatoes and passata. Add the olive oil. Peel the garlic and press it through a garlic press. Finely chop the basil, add it, along with the Italian herbs. Season with salt, pepper, and a little sugar, and mix everything together. Add the spaghetti to the prepared sauce mixture and loosen it with a few splashes of the cooking water. Gently toss everything together. Transfer the spaghetti to a plate, sprinkle with Parmesan cheese, and garnish with two or three basil leaves.
