Greek Tirópittes

Ingredients for 4 servings:

  • 500 g leaf spinach
  • 450 g puff pastry
  • 3 spring onions
  • dill
  • 2 eggs
  • 150 g feta cheese
  • 2 cloves garlic
  • Salt
  • pepper
  • Flour
  • olive oil

Greek dumplings with spinach and feta

Finely chop the spring onions and sauté them with the spinach in a pan with olive oil for about 5 minutes. Crumble or dice the feta, beat an egg, and add both to a bowl with the sautéed spinach. Season with dill, salt, pepper, and crushed garlic, and mix well. Dust the puff pastry with a little flour and carefully roll it out to about A4 size (or trim to size). Cut the puff pastry into 3 strips. Place the spinach filling (about 2-3 heaped tablespoons, depending on the size) on a corner of the pastry and fold it into a triangle. Arrange the finished pastries on a baking sheet. Brush the pastries with egg yolk to ensure they turn golden brown. Bake in the oven at 180°C for about 20 minutes. This recipe makes about 20 pastries. Serve with a mixed salad or Greek farmer’s salad. The Tirópittes also taste wonderful cold and are therefore also ideal as finger food for parties!
