Sea bream from the oven

Ingredients for 4 servings:

  • 4 fish(s), sea bream 200 g each
  • 200 g spring onions, cleaned
  • 3 garlic cloves
  • 6 tbsp olive oil
  • 3 beefsteak tomatoes
  • 50 ml white wine
  • 150 g feta cheese
  • 1 lemon(s)
  • 2 tbsp flour
  • 1 tsp dill tips
  • 1 bay leaf
  • ½ tsp pepper
  • Salt

Preheat the oven to 220°C (425°F). Slice the spring onions into rings. Peel and mince the garlic. Peel the tomatoes, remove the seeds, and dice them. Heat half of the olive oil in a saucepan and sauté the spring onions for 5 minutes. Add the garlic and stir in the diced tomatoes. Add the dill and crumbled bay leaf, and season with salt and pepper. Clean the sea bream and lightly score the skin across the back of the fish. Season inside and out with salt, pepper, and lemon juice. Heat the remaining olive oil in a pan. Coat the sea bream in flour and sear on both sides, then place in a deep baking tray. Spread the steamed vegetables on top. Sprinkle with feta cheese and bake in the oven for 12 minutes.
