Salmon on zucchini ragout with feta cheese

Ingredients for 2 servings:

  • 250 g salmon fillet(s), frozen
  • 350 g zucchini
  • 125 g sheep’s cheese
  • Butter for frying
  • Salt
  • pepper

very easy and quick

In a large nonstick pan, first fry the salmon on both sides in butter, then season with salt and a little pepper. Meanwhile, dice the zucchini (quarter lengthwise and then cut into pieces about 0.5 cm wide). Then push the salmon fillets to the side of the pan and let them continue cooking. Cook the zucchini in the center of the pan with more butter and fry lightly, turning frequently. Meanwhile, finely dice the feta cheese. After about 10 minutes, the zucchini should be almost cooked. Now add the cheese cubes and stir in; the cheese should melt between the zucchini pieces. Because of the cheese, the vegetables should only need a little salt (season carefully), then add a little more pepper. Arrange the zucchini on the plates as a bed for the salmon fillet, then place the fish on top. This goes very well with a few slices of white bread (baguette, ciabatta) and a dry, fruity rosé wine.
