Capellini with burro and parmigiano

Ingredients for 4 servings:

  • 400 g pasta (capellini)
  • 120 g butter
  • 120 g Parmesan, medium-aged, freshly grated
  • n. B. Salt
  • n. B. Pepper, white

Instructions

Working time approx. 4 minutes; Total time approx. 4 minutes

4-minute pasta with butter and Parmesan

Cook the pasta according to the package instructions until al dente. Melt 80g of butter in a saucepan (but do not brown!) and divide 40g of butter, cut into curls or flakes, between the serving plates. Toss the cooked pasta in the melted butter with white pepper, salt, and 2/3 of the freshly grated Parmesan cheese. Then transfer the pasta to the serving plates and serve sprinkled with the remaining Parmesan. Note: The capellini (very thin spaghetti) only needs 3 minutes of cooking time. Provided you have boiling water and already grated Parmesan, you can have a hearty dish in just 4 minutes. Regular spaghetti works well too, but it will take a little longer. The actual cooking time is the same.
