Ingredients for 4 servings:

  • 400 g spaghetti or linguine
  • 8 anchovy fillets
  • 8 tbsp olive oil
  • 1 tsp garlic paste
  • 1 tbsp parsley, flat, finely chopped
  • n. B. pepper, black

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

5-minute anchovy sauce for pasta

First: The anchovy fillets need to be soaked in water for 5 minutes if they have been salted. However, some fillets are also available that have been marinated in oil, so no soaking is necessary. Cook the pasta according to the package instructions until al dente, then drain. Finely chop the anchovy fillets and gently heat them in hot olive oil over low heat. Add the garlic paste just before cooking, otherwise the garlic risks burning and becoming bitter. Add the cooked pasta and the finely chopped flat-leaf parsley. Season with pepper to taste and mix well. Serve.
