Pasta with tomato sauce

Ingredients for 4 servings:

  • 2 cans of tomatoes, chopped
  • Salt and pepper, freshly ground
  • Oregano, dried
  • 1 handful of basil , a large
  • 3 garlic cloves, sliced
  • 5 tbsp extra virgin olive oil
  • 50 g Parmesan, freshly grated
  • 500 g spaghetti, or other pasta

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 35 minutes

Place the pan on the heat and add the tomatoes, garlic, and spices. Stir and simmer uncovered over low heat for about 30 minutes. Most of the liquid from the tomatoes should evaporate; sometimes it doesn’t take that long; you can compensate for this with a little water, as the garlic needs to be quite cooked. Cook the pasta al dente and drain. Now add the olive oil and the roughly torn basil leaves to the sauce, stir, adjust the seasoning if necessary, and mix with the cooked pasta. Serve on plates and sprinkle with Parmesan cheese. Tip: Tomatoes can sometimes be a bit acidic; this can be counteracted wonderfully with a pinch of sugar.
