Fried olives

Ingredients for 4 servings:

  • 300 g black olives, pitted
  • ½ bunch parsley, flat
  • 2 sprigs of marjoram
  • 4 garlic cloves
  • 1 small pepper, red
  • 4 tbsp olive oil
  • 4 tbsp vinegar (wine vinegar)

Working time approx. 20 minutes; Total time approx. 20 minutes

Antipasti – fried olives with white bread

Place the olives in a sieve and briefly rinse with cold water. Drain well, then place on a kitchen towel and pat dry. If you have pitted olives, they can be easily pitted using a cherry pitter. Wash the parsley and marjoram, shake dry, and finely chop without the stems. Peel the garlic and finely slice. Split the chili peppers lengthwise, remove the seeds, and cut into very thin rings. Heat the oil in a pan and fry the olives for about 5 minutes over medium heat. Now add the chili peppers and garlic, and fry for another 3 minutes, stirring. Add the vinegar and let it evaporate. Mix in the chopped herbs and serve while still hot. Serve with fresh white bread.
