Zucchini Frittata

Ingredients for 4 servings:

  • 1 onion(s), chopped
  • 2 zucchini, diced
  • 2 potatoes, boiled, peeled and diced
  • 5 eggs
  • 1 handful of parsley, flat, chopped
  • 1 handful of basil, chopped
  • 6 tbsp Parmesan, freshly grated
  • Salt and pepper, black
  • 2 tbsp butter

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Melt the butter in a large non-stick frying pan. Sauté the onions over very low heat for 2-3 minutes until translucent, but do not allow them to brown. Add the zucchini cubes and sauté for another 2-3 minutes. Then add the potato cubes and cook for 1 minute. Beat the eggs with the Parmesan cheese, parsley, basil, salt, and pepper and pour over the vegetables. Cook over low heat for about 5 minutes, until the egg mixture is set around the edges but still runny in the center. Remove from the heat and preheat the broiler. Place the frittata under the hot broiler and brown. The frittata tastes delicious both hot and cold.
