Spaghetti with scampi

Ingredients for 2 servings:

  • 8 scampi or 12, depending on size
  • 3 garlic cloves
  • 1 can of tomatoes or 250 g fresh tomatoes
  • 1 onion(s)
  • 1 cube of stock
  • 1 bunch of parsley
  • 200g spaghetti
  • salt and pepper
  • 1 Pepper
  • 125 ml white wine
  • 1 bunch of basil
  • 6 tbsp olive oil
  • Sugar
  • Flour

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Dice the onions and fry in 3 tablespoons of oil. Add the finely chopped tomatoes or canned tomatoes and stock cubes; season with salt, pepper, and a pinch of sugar. Simmer for about 10 minutes. Clean and quarter the scampi, tossing in salt, pepper, and flour. Cook the spaghetti al dente as usual. Peel and halve the garlic, and fry in hot oil until golden brown. Add the scampi and fry. Add the finely chopped chili peppers. Deglaze with white wine and pour in the tomato sauce. Chop most of the parsley and basil, add, and season to taste. Mix in the spaghetti and serve on plates. Garnish with the remaining herbs.
