Pasta with spinach, bacon and tomatoes

Ingredients for 4 servings:

  • 400g penne
  • 150 g leaf spinach, fresh
  • 2 cloves garlic
  • 1 can of tomatoes, approx. 400 g
  • 150 g bacon, streaky or bacon
  • 3 tbsp olive oil
  • 4 tbsp cheese (Italian grated cheese), more if needed
  • ½ onion(s)
  • salt and pepper

Working time approx. 20 minutes; Total time approx. 20 minutes

quick and easy

Finely chop the bacon and fry in a pan, drain off any fat and replace it with olive oil. Add the chopped garlic and the finely chopped tomatoes along with their liquid. If you like, you can also add a piece of chopped onion. Simmer until thickened. Season with salt and pepper to taste. In the meantime, cook the penne until al dente. Place the fresh spinach in a colander and drain the pasta over it. Arrange the spinach pasta on plates and pour the tomato sauce over it or mix it together. Serve sprinkled with grated Italian hard cheese. The quantities can of course be varied; some people prefer less spinach and more bacon, and vice versa.
