Italian turkey rolls

Ingredients for 4 servings:

  • 125g mozzarella
  • 8 thin turkey cutlets
  • salt and pepper
  • 8 slices of Parma ham
  • 2 tbsp oil
  • ¼ liter vegetable broth
  • 200 g shallot(s)
  • 4 tomatoes
  • 3 garlic cloves
  • 1 tbsp tomato paste

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the mozzarella into eight slices. Season the schnitzels with salt and pepper. Top each with a slice of ham and mozzarella and roll them up into roulades. Fry in hot fat for about 10 minutes. Then remove the roulades and keep warm. Slice the garlic and shallots, quarter and deseed two tomatoes. Dice the flesh. Cut the remaining tomatoes into wedges. Fry the garlic, diced and wedged tomatoes, and shallots in the fat from the roulades. Add tomato paste and sauté. Deglaze with stock, bring to a boil, and simmer for about 5 minutes. Season with salt and pepper. Tip: This goes best with tagliatelle pasta!
