Ingredients for 3 servings:

  • 1 egg yolk, room temperature
  • 125 ml oil (sunflower oil)
  • 1 tsp mustard, medium hot
  • lemon juice
  • Salt and pepper, white

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

substantial classic

Combine egg yolks, mustard, 1 tablespoon of lemon juice, and a pinch of salt in a bowl. Using a hand mixer or whisk (if you have the strength and stamina), slowly add the oil, initially drop by drop, then gradually in a thin stream (no pooling should form), until the mixture reaches the desired consistency. Season to taste with salt, pepper, and lemon juice.
