Sedanini with anchovies – Sugo

Ingredients for 4 servings:

  • 2 garlic cloves
  • 5 anchovy fillets, in oil
  • 2 tbsp olive oil
  • ½ bunch parsley, chopped
  • 1 small can of tomatoes
  • salt and pepper
  • Sugar
  • 400 g pasta (Sedanini), or other
  • 1 tbsp butter
  • 2 tbsp breadcrumbs
  • 60 g Parmesan, grated

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Chop the garlic and anchovy fillets. Heat the olive oil and sauté the garlic for 3 minutes. Add the canned tomatoes and crush with a fork. Season the sauce with salt, pepper, and sugar and simmer for 20 minutes. Cook the pasta and drain. Heat the butter and stir in the breadcrumbs to toast. Mix the pasta and Parmesan cheese into the sauce and sprinkle with the breadcrumbs.
