Ingredients for 1 servings:

  • 1 kg onion(s), red
  • 200 g sugar
  • 200 g brown cane sugar
  • 100 ml white wine
  • 100 ml balsamic vinegar
  • 30 g raisins
  • 2 bay leaves
  • 1 pinch(s) cinnamon powder
  • 1 pinch of clove powder

Instructions

Working time approx. 30 minutes; Rest time approx. 6 hours; Cooking/baking time approx. 45 minutes; Total time approx. 7 hours 15 minutes

Red pepper confettura

Halve the onion and slice into thin half-rings, then mix thoroughly with all the other ingredients. Cover and let stand in a cool place for at least 6 hours, stirring frequently. Remove the bay leaves and simmer the onions for about 45 minutes, stirring occasionally, until the liquid has reduced by half. Pour the hot jam into jars, seal, and briefly turn upside down. The specified quantity makes 4 jars of 250 ml each. The onion jam goes perfectly with cheese, meat (especially game), and also as a spread for crostini.
