Bean sprout salad

Ingredients for 4 servings:

  • 500 g soy sprouts
  • Salt
  • 2 tbsp soy sauce, light
  • 1 tbsp vinegar, rice wine-
  • 2 tbsp sesame oil
  • 2 spring onions

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the bean sprouts thoroughly and drain. Blanch in 1 liter of boiling salted water for 1 minute, drain, rinse with cold water, and drain. Make a dressing from the soy sauce, rice wine vinegar, sesame oil, and a pinch of salt and toss with the sprouts in a bowl. Trim, wash, dry, and slice the spring onions into rings. Fold in and serve.
