Ingredients for 3 servings:
- 1 onion(s)
- 2 garlic cloves, finely chopped
- 1 bunch parsley, finely chopped
- olive oil
- 1,000 g tomato sauce
- some salt and pepper
- some sugar
- 1 liter vegetable broth
- some vinegar
- 6 slices of bread (Pane Carasau – see my recipe)
- e.g. hard cheese (Grana Padano)
- 4 eggs
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 1 hour 45 minutes
Sauté the onions, garlic, and parsley in olive oil, then add the tomato sauce and bring to a boil. Season with salt, sugar, and pepper, cover, and simmer for about 1 hour. Heat the vegetable broth in a separate pot. Heat a separate pot of water with a splash of vinegar, and poach an egg for each plate. Carefully lower the egg into the boiling water and remove it with a ladle as soon as it develops a white “skin.” Briefly dip the bread in the broth and place it on a plate. Then add a little tomato sauce and some grated Grana Padano. Now add a second layer of Pane Carasau (also dipped in broth beforehand), followed by the tomato sauce and more Grana Padano. Finally, place a poached egg on top.
