Ingredients for 4 servings:

  • 520 g mozzarella
  • 250 g tomatoes
  • 2 eggs
  • 1 garlic clove(s)
  • 1 pinch(s) of oregano
  • 200 g flour
  • 200 g breadcrumbs
  • 6 tbsp olive oil
  • Salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Heat 2 tablespoons of oil in a pan, add the peeled and slightly crushed garlic clove, fry lightly, and then remove. Add the passata and a pinch of oregano, season with salt, and simmer for about 8 minutes. Meanwhile, crack the eggs and lightly salt them. Cut the mozzarella into 0.5 cm thick slices, pat dry with a paper towel, and coat first in flour, then in the egg, and finally in the breadcrumbs. Heat the remaining olive oil in a pan and quickly fry the mozzarella slices. Drain on paper towels and serve hot. Season the tomato sauce to taste and serve separately.
