Fried calamari

Ingredients for 4 servings:

  • 8 m.-sized squid(s), ready to cook
  • 1 tbsp lemon juice
  • salt and pepper
  • some Worcestershire sauce
  • 200 g flour
  • 1 egg(s), separated
  • ¼ liter of water
  • some salt
  • 2 tbsp, heaped flour
  • Olive oil for frying
  • Lemon wedge(s)
  • ½ bunch parsley

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 45 minutes

Rinse the calamari under cold water. Pat dry with paper towels. Cut into 1 cm wide pieces. Season with lemon juice, salt, pepper, and Worcestershire sauce. For the batter, put the flour in a bowl. Make a well in the center. Add the egg yolk, water, and salt. Starting in the center, stir into a smooth batter. Beat the egg whites until stiff and fold in. Put 2 tablespoons of flour in a plate. Coat the calamari pieces in the flour, then in the batter. Fry the calamari rings in hot oil at 175 degrees Celsius until golden brown. Serve garnished with lemon wedges and parsley.
