Fried fish balls

Ingredients for 4 servings:

  • 1 kg fish fillet(s) (e.g. plaice)
  • 2 eggs
  • 4 slices of white bread or toast
  • 1 can anchovy fillet(s) in oil
  • 30 g butter, soft
  • ½ bunch parsley, chopped
  • 2 clove(s) garlic, chopped
  • 1 handful of breadcrumbs
  • salt and pepper
  • some flour
  • Oil for frying
  • 1 lemon(s), grated peel
  • 1 jar white wine, dry

Instructions

Working time approx. 45 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 45 minutes

Wash the fish. Mix the lemon zest and white wine in salted water. Simmer the fish gently for 15 minutes, then drain, chop, and let cool slightly. Mix the soaked bread with the eggs, garlic, parsley, salt, and pepper. Chop the anchovy fillets and add them. Add the chopped fish and mix everything thoroughly. If desired, add some breadcrumbs to firm up the batter (this varies depending on the fish). Refrigerate the mixture briefly to firm up slightly. Then, using an ice cream scoop, scoop out balls and coat them in flour. Fry the balls in hot oil until browned.
