Fried honey sticks

Ingredients for 1 servings:

  • 50 g almond(s), peeled
  • 50 g honey, thin
  • 20 g yeast
  • 100 g powdered sugar
  • 400 g flour
  • 1 pinch of salt
  • 1 pinch of clove powder
  • ½ tsp cinnamon
  • Oil for frying

Working time approx. 40 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 40 minutes

Vecchiarelle, recipe from Calabria

Finely chop the almonds and briefly toast them in a dry pan. For the dough, mix the flour and spices in a bowl and make a well in the dough. Dissolve the yeast in 2 tablespoons of lukewarm water and add it to the well along with the almonds and powdered sugar. Mix everything together, gradually adding about 100 ml of lukewarm water until a smooth dough forms. Form into a ball, cover with a cloth, and let rise in a warm place for about 1 hour, until it has doubled in size. Knead the dough well on a floured surface, then form sticks about 1 cm thick and 3-4 cm long (I roll out the dough and use a pizza cutter). Heat oil in a saucepan or deep fryer. Fry the sticks in batches until golden brown. Drain on kitchen paper and place on a platter. Drizzle thinly with honey and serve immediately. Tip: You can also offer honey for dipping, because in the original recipe the crispy hot sticks are completely dipped in honey.
