Spaghetti with pumpkin, lime and shrimp

Ingredients for 4 servings:

  • 400g spaghetti or spaghettini
  • 8 large prawns (king prawns)
  • 200 g pumpkin flesh, finely chopped
  • 3 shallots, finely chopped
  • ½ organic lime(s), zest and juice
  • 1 chili pepper, chopped
  • 1 spring onion(s), chopped
  • 3 cloves garlic, finely chopped
  • 150 ml white wine
  • olive oil
  • butter
  • salt and pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Cook the spaghetti in salted water for 2 minutes less than the package instructions. Meanwhile, in a large pan, briefly fry the prawns in a little olive oil and set aside. In the same pan, fry the squash, add the shallots, garlic, and chili pepper, and fry gently. Drain the spaghetti and add it to the pan. Stir well over medium heat. Add a little wine and let it evaporate, stirring frequently. Then add a little more wine, let it evaporate, and continue until all the wine is used up. For the last step, stir in the lime juice, zest, spring onions, and prawns. Remove from the heat, stir in a knob of butter, and season to taste.
