Ingredients for 4 servings:
- 1 kg roast pork (loin)
- 2 garlic cloves, chopped
- 1 tbsp lemon zest, grated
- 2 tbsp rosemary, chopped
- 5 tbsp olive oil
- salt and pepper
- oregano
- basil

Florentine roast pork
Mix the garlic and lemon zest with the remaining spices and oil. Pierce the meat at regular intervals and fill with the seasoning mixture. Place in a casserole dish and season the outside with salt, pepper, and a little olive oil. Pour in approximately 250 ml of water. Cook in the oven at 200 °C for approximately 1 hour, turning frequently. You can also cook potatoes and vegetables (zucchini, eggplant, peppers) in the pan juices, if desired.
