Pork goulash with rosemary

Ingredients for 3 servings:

  • 750 g lean pork
  • 2 sprigs rosemary
  • 5 garlic cloves, sliced
  • 5 tbsp olive oil
  • Salt and pepper, black from the mill
  • 1 pepper, red, without seeds, sliced
  • 400 g tomatoes, peeled, or canned tomatoes
  • 125 ml white wine

Cut the pork into cubes and sear them vigorously in olive oil with the rosemary and garlic. Only when the meat is browned, add salt, pepper, and the chili pepper. Cut the tomatoes into pieces and add them to the pot with the meat. Pour in the white wine, cover, and let the meat simmer for about an hour. Serve with wholegrain rice and a cool white wine. This simple recipe thrives on the quality of its ingredients, so choose the best meat, preferably organic, good olive oil, and good wine! If ripe summer tomatoes aren’t available, use canned tomatoes, which are more flavorful.
