Basic pasta dough recipe

Ingredients for 6 servings:

  • 500 g flour (wheat flour)
  • 5 eggs
  • 1 tsp olive oil
  • Salt

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

For lasagna, tagliatelle, cannelloni, etc.

Put the flour in a bowl. Mix the eggs, oil, and salt and add them to a well in the flour. Knead well until you have a smooth dough. Cover the dough with a damp cloth and let it rest for about 30 minutes. Divide into two or three pieces. Dust a surface and rolling pin with flour. Roll out one ball of dough thinly. Do the same with the remaining dough. Let the pasta sheets dry briefly. Cut into the desired shape. Cook the pasta in salted water until tender, stirring occasionally. Drain and then briefly pour cold water over it to prevent it from sticking together.
