Tuna Livornese style

Ingredients for 4 servings:

  • 500 g tuna
  • 4 tbsp extra virgin olive oil
  • 2 tbsp flour
  • 1 onion(s)
  • 1 clove(s) garlic
  • 1 bunch of parsley
  • 1 jar wine, red
  • salt and pepper

Livorno sauce

Finely chop the onion and washed parsley. Heat olive oil in a pan, sauté the onion, parsley, and squeezed garlic clove, and add the tuna slices once the garlic turns golden yellow. Brown on both sides and, turning, deglaze with the wine. Allow to evaporate over high heat for a few seconds, then continue cooking over moderate heat for about 20 minutes. At the end of the cooking time, the sauce will have reduced. Place the tuna slices on a plate, drizzle with the sauce, and serve immediately.
