Emily's wine potatoes

Ingredients for 4 servings:

  • 1 kg potatoes
  • 3 onions
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 250 ml white wine
  • 250 ml vegetable stock
  • ½ bunch parsley
  • 1 bay leaf
  • Pepper, freshly ground
  • Salt

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Peel and wash the potatoes, and slice very thinly. Peel and dice the onions. Heat the oil and butter in a saucepan and sauté the onions. Add the potato slices and fry vigorously until they are crisp and golden brown. Add the wine, vegetable stock, and bay leaf to the potatoes and simmer with the lid on for about 20 minutes, until the potatoes are tender. Remove the lid and let the liquid reduce. Remove the bay leaf and season the wine potatoes with salt and pepper. Chop the parsley and sprinkle it over the potatoes.
