Gnocchi basic recipe with tip for sauce

Ingredients for 1 servings:

  • 1 potato(s)
  • 1 pinch of salt
  • 2 tbsp olive oil
  • some flour
  • some tomato sauce
  • some cream
  • some Parmesan, grated

Southern Italian

Boil the potatoes in salted water until tender. Peel, puree/mash, and mix with the oil. Add flour to taste until a smooth, uniform, soft, but not sticky mixture forms. Separate individual portions and form into long, approximately 1.5 cm thick rolls. Cut off each piece about 2-2.5 cm long. Use a fork to create the typical ridges on both sides. Briefly cook the gnocchi (correctly pronounced “njokki”) in hot, but not boiling, salted water until they float to the top (this only takes seconds). This dish is best served with a tomato sauce flavored with cream and grated Parmesan cheese, in which the gnocchi are tossed.
