Fruit cake

Ingredients for 1 servings:

  • 75 g margarine
  • 6 tbsp sugar
  • 115 g flour (wholemeal flour)
  • 115 g oat flakes, wholegrain
  • 1 ½ tsp baking powder
  • 3 egg whites
  • 4 packets of vanilla sugar
  • 1 peach(s)
  • 3 kiwis
  • 1 banana(s)
  • 2 packs of cake glaze, clear
  • 375 ml apple juice

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

For 1 springform pan with a diameter of 28 cm

Preheat the oven. Line the bottom of the baking pan with baking paper and lightly grease the sides. Beat the margarine and sugar until fluffy. Mix the oats, flour, and baking powder and stir into the sugar mixture. Beat the egg whites with the vanilla sugar until stiff and carefully fold into the batter. Pour the batter into the pan and bake in the oven at 175°C (center, fan oven 160°C) for approx. 20-25 minutes. Once slightly cooled, remove from the pan and turn out onto a wire rack. Remove the baking paper. Let cool. Peel the peaches and cut into wedges. Peel and slice the kiwis and bananas. Arrange the fruit on the cake base. Make a glaze from the cake glaze and apple juice according to the package instructions. Let cool slightly. Spread evenly over the fruit cake.
