Spaghetti with spicy fig sauce

Ingredients for 4 servings:

  • 350 g fig(s), ripe
  • 200 ml Marsala, dry
  • Salt
  • pepper
  • 5 egg yolks
  • 200 g Parmesan, in small cubes
  • 150 g Parmesan, freshly grated
  • some basil
  • 450g spaghetti

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Spaghetti with spicy sauce. A delicious, unusual Italian recipe.

Cut the figs into pieces. Pour the wine over them and let them stand for 1/2 hour. Preheat a serving bowl. Cook the spaghetti in plenty of salted water until al dente. Drain, reserving 1 cup of the cooking water. Add the spaghetti to the preheated bowl and pour the figs over it. Add the egg yolk and mix immediately, then add the Parmesan cheese (chunks and grated). Drizzle with the hot pasta water and mix everything well again to create a creamy sauce. Gently season with salt, pepper, and sprinkle with coarsely chopped basil leaves.
