Pasta, zucchini and mint

Ingredients for 2 servings:

  • 200g spaghetti
  • 2 m.-large zucchini, grated
  • 2 tbsp mint, chopped
  • 1 tbsp lemon juice
  • 1 pinch of chili flakes
  • some sea salt and pepper from the mill
  • some Parmesan, freshly grated

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Cook the pasta until al dente, drain, and return it to the pot. Toss with the grated zucchini, mint, lemon juice, chili flakes, salt, and pepper. Divide the pasta among plates, sprinkle with grated Parmesan cheese, and serve immediately.
