Kangaroo with mustard sauce

Ingredients for 4 servings:

  • 500 g kangaroo fillet(s)
  • some oil for frying
  • 2 onions
  • some butter
  • some flour
  • 3 tbsp dry white wine
  • 250 ml cream
  • 3 tbsp mustard
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel and dice the onion, and sweat it in a little butter. Dust it with flour and let it brown, then deglaze with the white wine. Add the mustard and cream and bring to a boil briefly. Season the sauce with salt and pepper. Heat the oil in a pan. Briefly sear the fillet on both sides and keep warm for 2 minutes. Then carve the meat and serve with the sauce. Serve with side dishes as desired (pasta, potatoes, etc.).
