Pak Choi – vegetables (Callaloo) in coconut milk

Ingredients for 4 servings:

  • 1 kg Pak Choi, small leaves (Asian store)
  • 150 g okra
  • 125 g ham, diced
  • 125 g crab meat
  • 1 tbsp oil
  • 1 small onion(s), red
  • 4 cloves garlic
  • 2 sprigs thyme, fresh
  • ½ liter chicken broth, from the jar
  • 100 ml coconut milk
  • 7 small chili peppers, green
  • n. B. Salt and pepper, from the mill

Working time approx. 15 minutes; Total time approx. 15 minutes

very similar to the Jamaican Callaloo and delicious

Peel the onion and garlic. Dice the onion and press the garlic through a garlic press. Finely chop the green chilies. Heat the oil in a pan and lightly fry the ham cubes, garlic, onion, and chilies. Once the onion is translucent, add the whole bok choy leaves and immediately pour in the chicken stock. Wash and halve the okra pods and add them to the pan with the thyme sprigs, then add the coconut milk. Finally, stir in the crab meat. Season with salt and pepper. This is an exotic change from the usual vegetable side dishes.
