Banana Peanut Muffins

Ingredients for 1 servings:

  • 50 g butter, soft
  • ½ cup sugar, brown
  • 1 egg(s)
  • 1 ½ cups flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¾ cup milk
  • 1 can peanuts
  • 2 bananas

Cream the butter and sugar in a bowl with a hand mixer (or a whisk) until creamy, then beat in the egg. Sift the flour, baking powder, and salt into a separate bowl. Dissolve the baking soda in the milk. Add the sifted ingredients and the milk to the butter mixture and beat until a smooth batter forms. Finally, slice the bananas, quarter the slices (or roughly mash the bananas with a fork), and mix them into the batter along with the peanuts (amount as desired; I always use a whole can, but some people find that too much). Pour the batter into muffin cups (don’t overfill them!) and bake at 200°C for 12-15 minutes. A quick tip: if you only have paper baking cups available, I recommend placing the batter in two nested cups, as the baking soda will cause the muffins to expand slightly and overflow in a single cup.
