Ingredients for 1 servings:
- 1 bunch coriander (approx. 100 g)
- 1 chili pepper(s), green
- 1 piece(s) ginger
- 2 cloves garlic
- 50 g cashew nuts, roasted and salted
- 1 dashes lemon juice
- 1 pinch(s) of pepper
- ¼ tsp salt
- 1 tbsp sesame oil
- 60 ml olive oil
Instructions
Working time approx. 5 minutes; Total time approx. 5 minutes
Roughly chop the coriander and add it to a blender. Add the quartered chili pepper, ginger, and peeled garlic cloves. Add the cashews to the blender and season with lemon juice, pepper, and salt. Then add the sesame oil and olive oil. Blend all ingredients, transfer to storage jars, and cover with a layer of olive oil to preserve the pesto.
