Chinese glass noodle salad

Ingredients for 2 servings:

  • 250 g glass noodles
  • 1 small red bell pepper(s)
  • ½ stalk(s) leek (the light green part)
  • 1 tsp sambal oelek
  • 1 tbsp soy sauce or a little more
  • 1 tsp sugar, brown
  • 1 tsp spice mix (Chinese spice)
  • 1 tbsp sesame oil or chili oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Add the glass noodles to the boiling water and let them stand for 2 minutes, then drain and let cool. Trim the bell peppers with scissors if desired. Trim the bell peppers and finely slice them. Thinly slice the light green part of the leek. Add both to the glass noodles. For the sauce, combine the soy sauce, oil, brown sugar, Chinese spice, and sambal oelek. Pour over the noodles, mix, and let the salad stand for about 30 minutes before serving.
