Ingredients for 2 servings:

  • 100 g soy sprouts
  • 50 g pineapple (from the can)
  • 100 g cucumber(s)
  • 1 small apple
  • 2 tbsp lemon juice
  • 1 tbsp peanut butter
  • 1 tbsp soy sauce
  • 2 tbsp pineapple juice (from the can)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Rinse the bean sprouts under cold water, drain, and place in a bowl. Place the pineapple in a small bowl. Peel the cucumber and apple, core the apple, and dice both. Drizzle the apple pieces with 1 tablespoon of lemon juice. Mix the pineapple, apple, and cucumber and spread over the bean sprouts. Mix the peanut butter with the remaining lemon juice, soy sauce, and pineapple juice. Drizzle this dressing over the salad.
