Polish sour cucumber soup

Ingredients for 6 servings:

  • 2 ½ liters of water
  • 3 large potatoes
  • 600 g chicken wings or pork ribs
  • 2 carrots
  • 1 piece(s) celery
  • 1 parsley root(s)
  • 4 gherkins, firm
  • 1 tbsp butter
  • ½ jar cucumber juice
  • some allspice
  • 4 bay leaves
  • 75 ml cream
  • 1 tbsp flour
  • 3 tsp fresh dill, chopped
  • 1 cube of chicken stock
  • some salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 10 minutes

Grate the cucumbers, reserving the juice, and set aside. Briefly fry the grated cucumbers in hot butter. Then add the flour and sauté for about 3 minutes, then set aside. In the meantime, prepare the meat and vegetable broth. Bring the water to a boil in a large pot and then add the meat. Add 1 cube of chicken broth, allspice, and bay leaves. Cook for about 15 minutes (ribs need longer). Meanwhile, peel, dice, and add the vegetables and potatoes. Cook the vegetables with the meat for about 20 minutes, then add the cucumbers. Then pour in the cucumber juice. Cook for a further 10 minutes. Slowly add the cream and dill while stirring. Season with salt and pepper.
