Ingredients for 4 servings:

  • 3 onions, red
  • 800 g spinach, fresh
  • 3 tsp peanuts, chopped
  • 2 slices of toast
  • 4 tbsp sour cream
  • 4 tsp mustard, regular or hot
  • 4 tsp lemon juice
  • 4 tsp balsamic vinegar
  • 200 ml vegetable stock
  • 1 tsp ginger, grated
  • 2 tsp chili sauce
  • Pepper, white

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Slice the onions into rings. Tear the spinach into bite-sized pieces and mix with the onions and nuts. For the croutons, dice the bread and toast them in a nonstick pan without adding any fat. Mix the sour cream with mustard, lemon juice, vinegar, and broth until smooth. Season with ginger, chili sauce, and pepper. Drizzle the salad with the dressing and serve sprinkled with croutons.
