Ingredients for 10 servings:
- 1 kg flour
- 10 eggs
- 1 pinch of salt
- some water
- 2 ½ kg minced meat, mixed
- 400 g sausage meat (pork meat)
- 2 onions
- 5 eggs
- 5 rolls, old
- 1 bunch of parsley
- salt and pepper
- nutmeg
- Water
- Instant vegetable broth
Instructions
Working time approx. 1 hour 45 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 55 minutes
Combine all the dough ingredients in a bowl and knead until smooth. Place the old rolls in a water bath and let them soak. Peel, dice, and steam the onions. Place the minced meat, sausage meat, eggs, onions, and parsley in a large bowl. When the rolls are soft, squeeze them dry and add them to the bowl. Mix the ingredients in the bowl until smooth and season with pepper, salt, and nutmeg. After both the dough and the filling have been prepared, take a portion of the dough and roll it out into a rectangle so that the rolled out dough is about 2-3 mm thick and about the size of a baking sheet. Spread some of the filling evenly and evenly over the rolled out dough. Starting at the longer side of the rectangle, roll the dough up. Using the handle of a wooden spoon, for example, press the dough into 5 cm wide pieces. Cut these pieces apart with a bread knife. Add the resulting pieces to boiling vegetable broth. Cook for 5 minutes with the lid closed and then for 5 minutes with the lid open.
