Ingredients for 4 servings:
- 250 g beans, white
- 2 bunch soup vegetables
- 200 g potato(s), waxy
- 300 g smoked bacon (belly bacon)
- 250 g Cabanossi
- 2 bell peppers, red
- 2 onions
- 2 cloves garlic
- 3 tbsp oil (sunflower oil)
- 1 tbsp paprika powder, rose hot
- Salt
- 100 g sour cream
Instructions
Working time approx. 50 minutes; Total time approx. 50 minutes
Soak the beans overnight in 1 1/2 liters of water. Cook in the water the next day for about 90 minutes. Rinse the soup vegetables and peel the potatoes, then roughly dice both. Add the diced potatoes after 60 minutes and the soup vegetables after 70 minutes. Cut the bacon into 2 cm cubes, the Cabanossi into slices, and the cleaned bell peppers into diamond shapes. Peel and dice the onions and garlic. Brown the bacon and sausage in oil, add the bell peppers, onions, and garlic, and fry until the onions are translucent. Stir in the hot paprika and add the mixture to the beans. Season the stew with salt and fold in the sour cream.
