Red Hungarian bean soup

Ingredients for 2 servings:

  • 2 onions
  • 1 pack of Cabanossi
  • 1 clove(s) garlic
  • 1 carrot(s)
  • 1 pack of tomatoes, pureed
  • 1 cup broth
  • 2 cans kidney beans
  • 1 tsp paprika powder, hot
  • 1 tsp chili powder
  • Olive oil for frying
  • salt and pepper

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Peel and dice the onions, then sauté in a little heated olive oil until translucent. Peel and chop the garlic, and add it. Slice the Cabanossi, trim the carrot, and slice it as well. Add everything to the onions and sauté. Just before it starts to stick to the bottom of the pot, deglaze with the tomatoes and stock. Add the kidney beans and let it simmer for a while. Add more liquid if needed. Season to taste with the spices and a little salt and pepper. Fresh bread goes best with the soup. Tip: You can garnish the soup with a dollop of sour cream.
