Ingredients for 4 servings:
- 400 g potatoes, mainly waxy
- ½ tsp caraway seeds, whole
- 1 onion(s)
- 2 tbsp butter
- 200 g sour cream
- 2 tbsp butter, brown
- 1 pinch(s) of cayenne pepper
- 1 pinch(s) coriander, ground
- 1 pinch(s) caraway, ground
- 2 tbsp chives, in rolls
- Nutmeg, ground
Instructions
Working time approx. 35 minutes; Total time approx. 35 minutes
Wash the potatoes and boil them in salted water with caraway seeds until soft. Drain the water, peel the potatoes, and press them through a potato ricer. Peel the onion, dice it, and fry it in a pan with butter over low heat until lightly browned. Combine the potatoes, onions, and sour cream, then add the browned butter. Season with salt, cayenne pepper, coriander, caraway seeds, and nutmeg. Ladle the potato cheese into small bowls and sprinkle with chives.
