Asian-style cucumber salad

Ingredients for 2 servings:

  • 1 cucumber(s)
  • 1 tbsp rice vinegar
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil, toasted
  • 1 tbsp teriyaki sauce
  • ¼ tsp five-spice powder
  • 1 tbsp sesame seeds, roasted

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Quarter the cucumber lengthwise. Cut off and discard the seeds and core. Cut the quarters into large, but still bite-sized pieces. Mix together rice vinegar, soy sauce, sesame oil, five-spice powder, teriyaki sauce, and sesame seeds to make a dressing. Add it to the cucumber pieces. Mix well and serve immediately. The cucumber can be peeled whole, or just in half for more bite.
