French onion soup

Ingredients for 4 servings:

  • 750 g onion(s)
  • 40 g butter
  • 5 tbsp olive oil
  • 1 tbsp flour
  • 2 liters of meat broth
  • salt and pepper
  • 1 small baguette(s)
  • 1 clove(s) garlic
  • 100 g cheese (Gruyere or Allgäu Emmental)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel and slice the onions into rings. Heat butter and 1 tablespoon of oil in a saucepan. Sauté the onions until translucent, sprinkle with flour, and sauté for another 3 minutes. Add the broth, season, and cover. Cook the onions over low heat for about 30 minutes. Cut the baguette into 16 slices and drizzle with 2 tablespoons of olive oil. Toast in a pan on both sides until golden brown. Peel and halve the garlic. Rub the bread slices with the broth and grate the cheese. Ladle the soup into eight ovenproof bowls. Place two slices of bread on top of each. Sprinkle with cheese and drizzle with the remaining oil. Place under a preheated grill.
