Ingredients for 4 servings:
- 500 g roast beef
- 2 onions
- 4 tomatoes
- 200 g mushrooms, fresh
- 1 cup crème fraîche
- 1 tsp mustard
- Sea salt
- Pepper, from the mill
- Paprika powder
- olive oil
- 125 ml white wine
- Herbs of Provence

Cut the roast beef into 1 cm thick slices, then into strips. Heat the oil in a large pan and brown the strips of meat. Remove from the pan and keep warm. Dice the onions and tomatoes, add them to the frying fat, and sauté for 5 minutes, covered. Stir in the sliced mushrooms, crème fraîche, and mustard. Season generously with salt, pepper, paprika, and Provençal herbs. Cover and simmer for about 8 minutes until the sauce has thickened. Add the meat and let it simmer in the sauce for about 5 minutes. Serve with rice or baguette and a green salad.
