Wok noodles with chicken breast and peanut sauce

Ingredients for 4 servings:

  • 1 jar soybean sprouts
  • 400 ml coconut milk, unsweetened
  • 400 g chicken breast fillet(s)
  • 3 tbsp peanut butter
  • 1 bunch of spring onions
  • 150 g noodles for the wok, (pre-cooked)
  • 150 ml broth
  • 2 tbsp oil, (wok oil or peanut oil)
  • Soy sauce, dark
  • Sambal Oelek
  • Salt
  • pepper

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash, trim, and chop the spring onions. Wash the chicken breast fillet, pat dry, and chop finely. Heat the oil in a wok, fry the meat and spring onions for about 3 minutes. Add the coconut milk, broth, and peanut butter; season with salt and pepper. Then add the soybean sprouts. Stir in the soy sauce and sambal oelek, adjusting to your liking, and cook for about 3 minutes. If you like it a bit spicier, stir in some chili flakes. Mix with the noodles. Alternatively, you can use rice instead of noodles.
